Servings: 6 muffins
Ingredients
1/2 cup – Wanka Foods Purple corn flour
1 cup – oats flour
1/2 cup – conrnstarch
2 1/2 – baking powder
5 eggs
3/4 cup – sweetener
2/3 cup – Butter
Procedure
Whip the butter until creamy, add the sweetener and whip until well blended, and add the eggs 1 by 1 until you get an homogeneous mixture. Then add the dry ingredients one by one, previously sifted.
Place in molds and bake at 180º C / 375º F for about 20 or 30 minutes
Tip
To make them softer, you can separate the whites from the yolks, whip them separatley until stiff and then add them to the mixture.
